Fried Spinach Balls

One way to get kids to eat spinach!

2 cups cooked spinach, chopped
2 tbsp butter, melted
2 eggs
1 cup breadcrumbs
2 tbsp grated onion
2 tbsp grated cheese
1/8 tsp allspice
1/4 cup water

Combine spinach with butter, 1 beaten egg, crumbs, onion, cheese and allspice and mix thoroughly. Let stand 10 minutes; shape into balls.

Combine remaining egg and the water and beat together until well blended. Roll spinach balls in crumbs, dip into egg and again into crumbs.

Fry in hot deep fat (375) until brown. Drain on absorbent paper before serving. Serves 6.

Serve with a garlic cream sauce, ranch dressing, or your favorite sauce, if desired.
