Twice around the skillet with olive oil; add sliced garlic (sliced thin with a razor blade); fry for a moment; add chopped onion and fry until translucent; add chopped fresh spinach leaves and chopped escarole; season with salt and pepper. After mixture has cooked down; beat eggs seasoned with salt and pepper; pour over spinach/escarole mixture in skillet. When bottom has set, place under broiler to cook tops of eggs. I use my paella pan for this - goes into the oven/broiler very easy.
Twice around a separate skillet with the olive oil. Fry Italian sausage with sliced onion, sliced green and red bell peppers.
Served with crusty Italian bread.
