Frozen Tofu Cherry Cups

Use these directions as a basic guide and add any fruits and flavorings you like. This mix also makes healthful Popsicles that do not drip.

Serving Size: 1 cup


soft tofu, drained - 12 oz
honey - 2 tbsp
almond extract - 1 tsp
almond or pecan cookies, crushed - 2
dark sweet cherries, halved and pitted - 20
cherries with stems for garnish - 6

  1. In food processor, process tofu, honey, almond flavoring, and half the cookies.

  2. Fold in cherry halves.

  3. Spoon into paper-lined muffin cups and sprinkle remaining crumbs.

  4. Cover and freeze 2 hours or until firm.

  5. Soften at room temperature 5-8 minutes before serving. Garnish with whole cherries.
