Garlic Cheese Grits
(6 to 8 servings)
1 cup regular or quick-cooking grits
1/4 lb butter
3/4 cup grated sharp cheddar cheese
1/2 cup milk
3 eggs, well beaten
2 tbsp finely chopped jalapeno peppers
2 tsp Worcestershire sauce
1/2 tsp minced garlic
1/4 tsp cayenne or Tabasco sauce
Salt and freshly ground pepper to taste
Preheat oven to 350 F.
Cook grits according to package directions. Regular grits require 25 to 30 minutes of slow cooking; quick-cooking grits will take 3 to 5 minutes.
While hot, add remaining ingredients and stir to blend well. Pour mixture into buttered 2-quart casserole and bake 30 to 40 minutes, or until set.
