Garlic Peppercorn Chicken Brochettes

Ingredients Preparation

1 1/2 pounds [680 g] chicken whites, cut into 1-inch [2.5-cm] cubes
1 cup [250 mL] roasted garlic and peppercorn sauce
2 tablespoons [30 mL] grated lemon rind
12 cherry tomatoes
8 pearl onions



Combine chicken cubes, roasted garlic peppercorn sauce and grated lemon rind into a bowl.
Cover and refrigerate for 2 hours.
Preheat barbecue to medium-high intensity.
Thread pearl onions and chicken cubes onto bamboo or metal skewers alternately with cherry tomatoes, ending with one pearl onion.
Grill brochettes onto hot barbecue rack for 10 to 12 minutes turning brochettes at halftime, until chicken is no longer pink inside.
Meanwhile, if desired, bring marinade to a boil over medium-high heat.
Serve brochettes, coated with hot marinade if desired.
