Garlic Potatoes (Microwave)
1 lb small (new) potatoes, scrubbed & patted dry
6 large cloves garlic, smashed and peeled
3 Tbsp extra virgin olive oil
1/2 tsp (kosher) salt
Fresh ground black pepper
Place potatoes in a 1 1/2 quart microwave safe dish. Mix remaining ingredients and pour over potatoes. Stir to coat well. Cover and cook on high for 10-15 minutes shaking dish to turn potatoes. Potatoes are done when they can be easily pierced to the center of potato.
Best if served hot. Serves 4 as a side dish.
