4 tbsp olive oil
1 head garlic, peeled and chopped
1 small hot pepper, finely chopped
4 tbsp chopped coriander leaves
1 tsp cumin
1 onion, chopped
2 medium sweet peppers, finely chopped
2 cups stewed tomatoes
6 cups water
2 tsp salt
1 tsp pepper
2 eggs, beaten
Heat oil in a saucepan, then saute onion, galric and both sweet and hot pepperrs over medium heat for 10 minutes. Stir in tomatoes, corriander leaves and water, then bring to boil.
Cover and cook over medium/low heat foir 30 minutes.
Add remaining ingredients, except eggs then bring to boil.
Re-cover then cook over medium heat for 20 minutes. Stir in eggs then serve immidiately.
Of course eggs are optional and vegans can leave them out. It is very spicy, I loved it!
