Gingerbread Waffles

 2/3           cup  molasses
 1/3           cup  melted butter

2 egg yolks
1 cup buttermilk
2 cups all-purpose flour
1/2 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup crystallized ginger – chopped
2 egg whites – beaten stiff

Combine the molasses, butter and egg yolks and whisk with fork until smooth. Blend in the buttermilk.

Sift together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg and salt into a mixing bowl. Stir in the crystallized ginger. Make a well in the center of the dry mixture and add the molasses mixture, beating quickly until smooth. Fold in the egg whites. If the batter seems too thick, add a little more buttermilk. Bake in your waffle iron until a dark golden brown. Makes 4 big, thick waffles.
