Glazes for Ham
Mustard Glaze
Mix thoroughly in small bowl:
1 cup packed brown sugar
1 tbsp flour
1 tsp dry mustard
Stir in 2 tbsp cider vinegar to form a smooth paste
Brown Sugar Glaze
Heat together in saucepan, stirring until sugar is dissolved:
1 cup packed brown sugar
2/3 cup light corn syrup
If desired, 2/3 cup spiced fruit juice or ginger ale may be substituted for corn syrup.
Cider
Combine and mix thoroughly:
3/4 cup packed brown sugar
1/2 tsp dry mustard
2 tbsp maple syrup
Spread glaze over ham.
Occassionally baste ham with about 3/4 cup apple cider.
Apricot
Combine:
3/4 cup apricot jam
3/4 cup honey
2 tbsp lemon juice or cider vinegar
Spread glaze over ham.
Pineapple and Lemon
1 (8 oz) can pineapple slices in juice
2 tbsp light brown sugar
2 tsp cornstarch
1 tbsp butter
1 tbsp lemon juice
Into 1-quart saucepan, drain the pineapple juice and reserve the pineapple slices.
Into pineapple juice, stir brown sugar and cornstarch until completely smooth. Over medium heat, stir the mixture until thickened and boiling.
Remove from heat; stir in butter and lemon juice until well blended.
Brush the glaze over the ham. Arrange pineapple slices over ham (use toothpicks or whole cloves). Return ham to oven, brushing occasionally with glaze.
OR
1 (8oz) can crushed pineapple, well drained
1/2 cup packed brown sugar
Combine crushed pineapple with brown sugar.
With spoon, evenly pat the prepared pineapple mixture on ham.
Bake 30 minutes longer.
Orange Glaze
1/2 cup orange marmalade
1-1/2 tsp prepared mustard
1 small orange
whole cloves
In 1-quart saucepan over low heat, heat orange marmalade and mustard until marmalade is melted.
With pastry brush, brush half of the prepared orange glaze evenly over the picnic ham. Return the picnic ham to oven and bake 20 minutes longer or until 140 degrees.
Remove picnic from oven. Cut orange into very thin slices and halve them; arrange in rows over picnic overlapping them slightly and fastening with cloves. Brush remaining wrm glaze over orange slices.
Return the picnic to oven and bake 10 minutes more until orange slices are heated through.
