Gold Mine Nuggets Cookies

Gold Mine Nuggets Cookies

These cookies are chewy and moist,
with a chocolate flavor. The “gold”
comes from canned crushed pineapple
stirred right into the batter, along
with oats, walnuts, cinnamon and
chocolate chips.

1/2 cup (1 stick) butter, softened
3/4 cup brown sugar, packed
1/2 tsp vanilla extract
1 egg
1 (8.25 oz) can crushed pineapple with liquid
1 cup quick-cooking rolled oats
1 cup all-purpose flour
1 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon
1/2 cup chopped walnuts
1 (6 oz) package chocolate chips

Cream butter, sugar and vanilla until fluffy.
Beat in egg and undrained pineapple.
Combine oats, flour, soda, salt and cinnamon;
stir into pineapple mixture with nuts and
chocolate chips.

Drop by teaspoonfuls onto ungreased cookie sheets.
Bake in 350 degrees F oven for 12 to 15-minutes.

Makes about 3 dozen cookies.

My printer is running again. I’ve never seen a recipe for cookies with pineapple before. Thanks for posting.

When I collect recipes, I copy and paste them to Windows Notepad and save it to the hard disk. If I want to cook a recipe, then I print it out.

Love your idea for saving! Thanks.

I have a desk in my kitchen for my laptop, and just pull up the recipe I want while I am cooking.
