Gorditas

12 corn tortillas
1 cup tomato sauce
1 medium onion (minced)
1 clove garlic (minced)
1 teaspoon oregano
1 ounce white wine vinegar
3 tablespoon olive oil
1 1⁄2 teaspoon chili powder (or to taste – or 1 small hot chili pepper, minced)
1⁄2 pound ground beef or chorizo
3⁄4 cup cooked potatoes (diced)
2 tablespoon vegetable oil
1 very small onion (minced – omit if you use chorizo)
3⁄4 cup mild cheese (grated)
1⁄4 cup almonds (blanched and chopped – optional)
salt (to taste)
shortening for deep frying

To make sauce: Combine tomato sauce, medium onion, garlic, oregano, white wine vinegar, olive oil, chili powder and salt to taste. Simmer for about 30 minutes, or until slightly thickened. Let cool.

To make filling: Brown the beef and potatoes in oil and add a small amount of the onion (if using), the grated cheese, almonds and salt to taste. Sauté the tortillas in deep fat or a few minutes; drain on absorbent paper. Fill each tortilla with meat and top with cheese. Pour some of the sauce over the meat.
