Grandpa Nino's Lasagna

1 pound Italian Sausage (Can also use ground beef)
1 clove garlic, mashed
1 tbs. parsley flakes (grandpa always used fresh herbs but dried is OK)
1 tbs. basil
1 1/2 tsp. salt
1 -1lb can (or 2 cups fresh, add a bit of water if fresh is used)) tomatoes
2-6oz. cans tomato paste
10 oz. lasagna noodles
3 cups ricotta cheese
2 beaten eggs
2 tsp. salt
1/2 tsp. pepper
2 tbs. parsley flakes
1/2 cup fresh;y grated parmesan cheese
1 pound mozarella cheese, slised VERY thin

Brown meat, drain. Add next 6 ingredients. Simmer uncovered until sauce is thick, 45 minutes to 1 hour. Stir occasionaly.
Cook noodles until tender, drain and rinse in cold water,
Combine ricotta cheese with eggs, seasonings and parmesan cheese.
Place half the cook noodles in a 13x9x2inch baking dish, spread half of the ricotta cheese mixture over noodles, spread half of the meat sauce over ricotta mixture, and half of the mozzarella cheese over the meat sauce. Repeat layers. Bake at 375 for 30 minutes. Let stand 15 minutes before cutting into squares. Filling will set slightly. :smiley:
