Gratin Of Potatoes - (gratin Dauphinois)

Yield: 4 servings.


8 medium potatoes
1/2 teaspoon salt
1/4 teaspoon white pepper
1 pinch grated nutmeg
1 cup scalded milk
1 cup light cream
1 egg – beaten
1/4 cup grated swiss cheese

Peel potatoes and cut into slices approximately 1/4-inch thick.

In a bowl, combine potatoes, salt, pepper, nutmeg, milk, cream, egg, and grated cheese. Turn mixture into a buttered baking dish. Dot with butter.

Bake at 400 degrees for 1 hour, or until potatoes are tender and top is browned. Serve immediately.
