Use lean burger meat making patties large and very thin. Mix crumbly blue cheese (8 oz) with 1/4 c worcestershire sauce, 1/4 c soy sauce and 1 finely chopped green onion. (Cover and refrigerate mixture overnight for best flavor) Spoon 1 tbsp mixture onto 1/2 of the patties and cover with remaining 1/2 of patties. Seal the edges all around (wet hands with milk or water fir smooth seal. Grill over open flame, charcoal or gas grill about 7 minutes per side. Careful when turning to keep from breaking burgers. Keep water spray bottle on hand for flare-ups. Serve on your favorite bread with or without additional toppings. (We prefer kaiser rolls). We have made these under the broiler, but they taste best when grilled.
