Greek Rice Salad

1 pkg. Uncle Bens classic long grain & wild rice
1 cup chopped cucumber
1 cup (+) crumbled feta
1/4 fresh parsley, chopped
1/3 cup olive oil
3 tbs. red vinegar
1 clove garlic, minced
2 tsp. oregano
1 large tomato, chopped

Prepare rice as directed. cool 15 min. in large bowl, combine rice, cucumber, cheese and parsley. combine oil, vinegar, garlic & oregano. pour over rice and toss. cover and chill 4 hours or overnight. stir in tomato just before serving.
