greens the southern way

one to two heads of greens I prefer collard but you can use any type
1 smoked turkey leg or neck
1 small onion chopped
2 cloves garlic
enough water to cover greens

be sure and clean greens really well it’s best to soak in cold water
tear the greens do not use knife to cut and rinse again

take the leg and cut chunks off bone and place in pan
place leg in pan and add greens and onion and garlic
cook on high heat until starts to boil then turn down to low heat
cook until most of water has evaporated
serve

You do not need to add salt since the smoked meat usually is very salty
