Grilled Beef and Blue Cheese Quesadillas
1 pound flank steak, grilled and cut into strips
6-8 flour tortillas
3/4 cup blue cheese, crumbled
3/4 cup viniagrette
1/2 red onion, chopped
2 avacados, sliced
Preheat grill for medium heat. Combine red onion, viniagrette, and blue cheese in a bowl. Place even portions of steak and blue cheese mixture over tortillas. Fold tortillas in half and place onto grill. Cook for 3 minutes, turn and cook for a remaining 2 minutes. Remove from heat and serve with sliced avacados on top.
