It’s a beautiful Sunday here and it’s my day off. Time to fire up the coals:D
1 chicken, whole, cut up.
1 cup plain yougart
2 tblspn red thai curry paste
1/4 tspn cumin
2 tblspn olive oil
the juice of 1 lemon
2 large cloves garlic, crushed
salt and pepper to taste.
Mix all in a large plastic bag and let marrinade over night.
grill indirect over hot coals 1 hour.
As it turns out I did not grill this yesterday. I had toady off too (a 3 day weekend my boss gave me to reward my putting in overtime to cover her vacation), so I thought I’d give it a whole 24hrs to marinate and do it right.
Today we got rain, and a weasel, standing by his grill, shaking his fists at the heavens and cursing the gods.
Ok! Into the oven for 1 hour at 350. No nice smoke flavor, but, a litte tart, a little garlic, a good cury flavor without being at all “spicy” (the yogurt neutralises the spice of the curry but not the yummy taste), juicy and yum.
I don’t worry about cursing the gods, I worry that they may be chickens. If so I am sooo going to perdition.
