Grilled Island Chicken

2-3 lbs. bone-in split chicken breasts, thighs, drumsticks or a mix
1/3 cup lite soy sauce
1 small onion, chopped
3 cloves garlic, minced
1 Tbsp curry powder
1 tsp minced fresh ginger or 1/2 tsp ground ginger
1/4 tsp ground red pepper

Prepare a medium-hot fire in grill. Meanwhile, mix together marinade ingredients (thin with a little water if too thick). Remove skin from chicken if desired. Place chicken on prepared grill. Baste chicken with sauce and continue cooking, turning and basting with sauce approximately every 10 minutes. Internal temperature of breast should be 170°F and thighs and drumsticks should be 180°F.
