Grilled Steaks with Seven Flavors

Yields 4 servings

1/4 pound unsalted butter, softened
2 tablespoons minced garlic
1/4 cup chopped parsley or cilantro
2 tablespoons chili powder
1 tablespoon minced garlic
1 teaspoon cumin
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
1 teaspoon sugar
1/4 cup Worcestershire sauce
4 1-1/2 inch thick porterhouse steaks
salt and pepper to taste

Combine butter, 2 tablespoons garlic and parsley in a bowl. Mix until well
blended. Allow to rest at least one hour before using.

Combine next seven ingredients, stir to form a paste. Rub steaks on both
sides with paste. Cover and allow to marinate 2 hours to 2 days.

Grill steaks over Medium-High coals or over fire in a ridged cast iron pan,
approximately 5 minutes on each side for rare.

Top steaks with garlic butter. Salt and pepper to taste.

looking forward to giving this a try - sounds fantastic. perhaps a silly question but do you combine the butter blend with the 7 ingredients to form the paste or is that only for the garlic butter. how much garlic butter should you use to top the steak. thank you!
