Grilled Tuna Steak With Spicy Honey Mustard –

4 (8 oz) fresh tuna steaks
1/4 cup whole butter
1 clove fresh garlic, crushed
1/4 cup mayonnaise
1/8 cup Dijon-style mustard
1/8 cup spicy brown mustard
1/4 cup honey
1 tsp cayenne pepper
Salt and pepper to taste
Fresh parsley, chopped
Lemon wedges

Season grill rack with oil or non-stick spray; rinse steaks in cold water and set aside on towels to dry. Melt butter and add garlic to baste tuna when grilling. Combine mayo, mustards, cayenne pepper and honey and whip for about a minute, then set aside (this can be made in advance and refrigerated). Cook the steaks over a hot grill (no flames) for 2 or three minutes per side. Serve with the honey mustard in ramekins or drizzled on the plate under the tuna steaks. Finally, much of our talk about grilling has centered around beef, pork and chicken. Don’t forget seafood!

A word of caution: keep an eye on the tuna on the grill. You want these to be just a bit past medium rare. Dried tuna steaks are NO treat!
Garnish with parsley and lemon wedges.
