Ground Beef Casserole with Herb Stuffing

l l/2 lb. lean ground beef
l egg, beaten
l medium onion, chopped
l/2 c. crushed soda crackers
l/2 medium chopped green pepper
2/3 cup water
l/3 c. butter or margarine
2 cups herb seasoned stuffing mix
2 medium stalks celery, chopped
l (10 3/4) can cream of mushroom soup

Combine ground beef, egg, half of the onion, green pepper & crackers. Mix well. Line l l/2 qt. round casserole with mixture, pressing it evenly over bottom and against sides. Combine water & butter, heating until butter melts. Add stuffing mix, celery & remaining half of onion. Mix lightly but thoroughly. Spoon stuffing into center of the casserole. Spoon undilute soup over stuffing. Bake, uncovered, in oven for 1 hour at 350. Makes 4-5 servings.

this is a first for me. I hope I do this right. I did not post a recipe. I do want to thankyou for this casserole. I will make this for the coming weekend.

Sounds like true comfort food, thanks for sharing… I’m going to have to switch the green pepper for red ones though. Not your recipe, here all recipes with green peppers under go the swap.
