6 fully cooked ham slices, cut 1/2 in. thick (about 2 pounds)
4 cups hot cooked rice
4 oz. sharpe cheddar cheese, shredded
1/4 cup sliced green onion (with tops)
2 Tbsp. snipped parsley
1/4 tsp. salt
Slash edges of ham slices. Broil 2 in. from heat for 4 minutes on each side. Toss together rice, cheese, onion, parsley and salt. Arrange rice mixture on a platter; top with ham slices.
Ham with Nectarines
1 fully cooked center cut ham slice, about 2 in. thick about 3 pounds.
1 cup sugar
2 Tbsp. cornstarch
2 tsp.seasoned salt
2 tsp. dry mustard
1/2 tsp. paprika
1/3 cup orange juice
1/4 cup vinegar
2 slightly beaten egg yolks
2 or 3 very ripe nectarines, sliced (about 1-1/2 cups)
Preheat oven to 350*F.
Slash edges of the ham. Place on rack in shallow baking pan; bake for 40 minutes. meanwhile, in a saucepan mix sugar, cornstarch, seasoned salt, mustard and paprika. Blend in 1 cup cold water, orange juice and vinegar. Cook over low heat, stirring constantly, until thickened and smooth. Stir a small amount of hot mixture into egg yolks; return quickly to hot mixture, Cook and stir 1 minute or till bubbly. Add nectarines. Place ham on a serving platter; spoon on some of the nectarine sauce. Pass remaining sauce with ham.
