Hamburger Helper-type Recipes

2 cups nonfat dry instant milk
1 cup corn starch
1/4 cup unsalted chicken or beef bouillon powder
2 tablespoons onion flakes
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon black pepper
2 tablespoons dried parsley
1 tablespoon garlic powder

1)Mix the ingredients together and store in an air tight container.

2)Use the above “Helper” mix as a base for the following dinners. (Each serves four to six people.

Chili Tomato Mac
Brown one pound ground beef or turkey and drain off the fat. Add one cup water, one and one-half cups of uncooked macaroni, two 15-oz cans chopped tomatoes, one tablespoon chili powder and one-half cup of the “Helper” mix. Simmer covered 20 minutes or until macaroni is tender.

Ground Beef Stroganoff
Brown one pound ground beef or turkey and drain off the fat. Add 2 cups water, one-half cup “Helper” mix and two cups uncooked egg noodles and stir. Bring mixture to a boil, reduce heat and simmer covered for 15-20 minutes or until noodles are tender. Top with one-half cup “light” sour cream or plain yogurt.
Serve immediately.

Hearty Potato Casserole
Brown one pound ground beef or turkey and drain off the fat. Add three-fourth cup water, six peeled potatoes (sliced very thin), one cup of frozen mixed peas and carrots and one-half cup plus 1 tablespoon seasoning mix. Simmer covered 20-30 minutes or until potatoes are tender. Stir, uncover and cook until excess water is evaporated.

Skillet Lasagna
In a large skillet, brown one pound of lean ground beef, crumble. Drain off the fat and add: one-half cup of the Homemade Ground Beef Helper Mix, one chopped onion, two cups water, 16 ounces of tomato sauce, three cups dry noodles and one-fourth cup Parmesan cheese. Bring to a boil. Reduce heat and simmer for 15 minutes, stirring until thickened. Top with two cups of mozzarella cheese five minutes before serving; turn off heat, stop stirring and allow cheese to melt.

Rice-A-Roni-type Recipes

Base ingredients for the rice:
1 cup long-grain, converted rice
Flavor Packet
2 tablespoons butter
2 1/2 cups hot water

Melt the butter in a heavy saucepan over medium heat. Saute the rice, stirring constantly, until it takes on a translucent quality; do not let the kernels pop. Slowly stir in the water, then the Flavor Packet; bring to a full boil; cover and lower heat. Simmer 20 to 25 minutes, or until nearly all of liquid is absorbed and the rice looks just a bit too moist to serve. Turn off heat and let stand for 10 minutes before uncovering and serving.

Flavor Packets:

Chicken:
3 chicken bouillon cubes, crushed
1/4 teaspoon parsley flakes
3 dashes pepper

Beef:
3 beef bouillon cubes, crushed
3 dashes pepper

Onion:
3 onion or beef bouillon cubes, crushed
2 teaspoons dried minced or chopped onion
3 dashes pepper

Mushroom:
3 chicken or beef bouillon cubes, crushed
2 tablespoons dried mushroom slices, in bits
3 dashes pepper

Celery:
3 chicken bouillon cubes, crushed
3 tablespoons dried celery flakes
3 dashes pepper

Curry:
3 chicken bouillon cubes, crushed
1 teaspoon curry powder

Saffron:
3 chicken bouillon cubes, crushed
1 pinch saffron
1 pinch turmeric

Oriental:
3 chicken bouillon cubes, crushed
1 onion bouillon cube, crushed
2 teaspoons dried celery flakes
2 teaspoons dried mushroom slices, in bits
1 teaspoon dried minced onion
dash of powdered ginger
add several dashes soy sauce to boiling water

Spanish:
3 chicken bouillon cubes, crushed
2 tablespoons dried green pepper flakes
2 tablespoons dried minced onion
dash of chili powder
add 2 tablespoons tomato paste to boiling water

Sauce Recipes

Onion Soup Mix:

3 tbsp. beef boullion
1/3 c. minced dry onion
2 tsp. onion powder
1 tsp. seasoning salt

Mix together and store in an airtight container.

To use:
Add 1 tbsp. to 1 c. sour cream for dip.
Add 1 tbsp. to 1 lb. hamburger for added flavor
Add 2 tbsp. to 1 c. boiling water for soup

White Sauce Mix:
2 c. nonfat dry milk
1 c. flour
1 tsp. salt
2/3 c. margarine, room temperature

In a bowl stir together dry milk, flour, and salt. Cut the margarine into the dry ingredients with mixer or fork until it is mixed evenly. Store in an airtight container in the refrigerator or freezer. Stores for 6-12 months.

To Make Sauce:
Combine desired amount of white sauce mix and water in a pan. Cook, stirring occasionally, over medium heat until smooth and thickened. Simmer for 2-3 minutes. Makes about 1 cup.

Thin Sauce:
1/3 c. mix, 1 c. water
Medium Sauce:
1/2 c. mix, 1 c. water
Thick Sauce:
2/3 c. mix, 1 c. water

Variation:
Cheese sauce: add 1/2 c. grated cheese to thickened sauce
