Haven’t been here in a while – in and out of hospitals and Nursing/Rehabilitation Centers – getting to “watch” a lot of cooking shows on TV.
Watched Giada D. make profiteroles stuffed with a goat cheese and roasted red peppers. and then saw Anne Burrell and Ina Gartin also do profiteroles THE SAME DAY!!!
Anne Burrell also has a demo video that was very easy to follow for the “dessert” version.

Was very surprised at how EASY they were. Never tried to make them before. Made them for Super Bowl Sunday with 3 different kinds of stuffing: used hers and store bough Spinach Dip, Crab Dip and doctored them up a little to taste!!!.
Did make them in batches and the second batch did not rise ( puff up/hollow out ) enough – so next time I will have to use two pans and bake at the same time.
BUT they still turned out great!
Try these – bite sized or not – even in a mini muffin pan to control size and shape.
