Healthy Antipasto

Entertaining dosen’t need to be difficult. Treat your guests to these impressive but easy appetizers.

Serving Size: 1 Skewer

Ingredients:

baby spinach leaves - 8
cherry tomatoes - 8
pitted greek olives - 8
mozzarella cheese, part skim cut into 8 1/2-inch cubes - 2 oz
artichoke hearts quartered rinsed and drained - 2
hearts of palm stalks rinsed and drained cut crosswise into 4 pieces - 2
sliced turkey pepperoni - 8 slices
balsamic vinegar - 2 tbsp
extra-virgin olive oil - 2 tsp
dried basil crumbled - 1 tsp
dried oregano - 1/2 tsp

  1. Thread a 6-inch skewer with 1 each spinich leaf, tomato, olive, cheese cube, artichoke heart heart of palm piece, and pepperoni slice. Repeat with the other 7 skewers. Place on a platter.

  2. In a small bowl, whisk together the remaining ingredients. Spoon evenly over the skewers.
