Healthy Dinner Delights - 10/01/2010

I like to cook simple food, and this year I am trying to be as healthy as possible. Last night I made a warm salad - it was really tasty and this is what I did.
Warm some olive oil in a pan with dried chilli flakes and a crushed clove of garlic.
Add some curly kale and wilt slowly.
Transfer to plate and add prawns, chopped red pepper, avocado and red onion,and a little chopped fresh chilli.
Season and add a glob of mayo - delicious and healthy.
