1 1/2 t. olive oil or vegetable oil
1/2 green bell pepper, finely choppe
1/4 med. yellow onion, finely chopped
1 clove garlic, minced
1 rib celery, finely chopped
1/2 lb. 99% lean ground turkey
1 T. red wine vinegar
2 T. tomato paste
1 1/2 t. brown sugar (optional)
1/3 c. strained tomatoesDash nutmeg
2 lg. whole weat hamburger buns

Preheat broiler.

Heat oil in large saute pan over low heat; add green pepper, onion, garlic and celery. Cover and cook, stirring occasionally until vegetables are softened and translucent - about 7 minutes.

Push vegetables to one side of the pan; bring heat up to medium-high and add turkey to the side without veggies and cook until almost cooked through - about 7 minutes.

Combine meat and veggies; add vinegar and stir; add tomato paste and brown sugar (if using); cook until browned. Add tomatoes, nutmeg, salt and pepper (to taste). Lower heat and simmer until thick -about 3 minutes.

Toast buns in broiler until golden brown. Divide meat between buns, garnish with sallions and serve.
