Hearty Beef Stew

Ingredients
2 teaspoons minced garlic
1 teaspoon salt
2 pounds beef round steak, trimmed & cut into 1-inch cubes
3 cups thinly sliced and halved sweet onions
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1 can (14-1/2 oz.) tomato or spaghetti sauce
2 pounds red potatoes, quartered
2 pounds carrots baby carrots
1 pound white mushrooms, quartered

In a slow cooker combine garlic, beef cubes, onions, thyme, and pepper. Stir in potatoes, carrots, mushrooms, tomatoes and their juice, and tomato paste; cook 6-8 hours on high until meat and vegetables are tender. Makes 10 servings.

Note: I like to saute my onions in a skillet and a little olive oil first.
