Hearty Ham Frittata
1/2 lbs asparagus, trimmed of tough ends
2 tbsp. butter
1 small onion, thinly sliced
4 oz (about 1 cup) shredded Swiss Cheese
4 oz (1/4-inch thick) Maple Brown Sugar Ham, cut into 1/2-inch cubes
8 large eggs
1 medium tomato, seeded and cut into 8 wedges
1/4 cup water
1/4 tsp. salt and freshly ground pepper to taste
STEP 1: Cut asparagus into 1-inch pieces.
STEP 2: In a non-stick oven safe 10-inch skillet melt butter over medium heat. Add asparagus and onion; cook 10 minutes, or until asparagus is tender-crisp. Add ham to skillet and set aside.
STEP 3: Preheat broiler. Beat eggs, water salt and pepper in a medium bowl. Add 1/2 of the shredded cheese.
STEP 4: Pour egg mixture over asparagus in skillet; arrange tomato wedges on top. Cover and cook over medium heat 10 minutes or until set. Sprinkle with remaining cheese.
STEP 5: Broil frittata 1 minute, or until cheese is melts. Loosen frittata and slide onto platter. cut into wedges. Serve hot or at room temperature.
