HEAVENLY HAM STRATA
2 pkgs. frozen chopped spinach, cooked and drained
1 t. butter
2 T. onion, chopped
1/2 t. pepper
18 slices day-old bread, crusts removed
12 slices sharp American cheese
2 c. ham, diced
6 eggs, slightly beaten
3 1/2 c. milk
1/2 c. Cheddar cheese, shredded
Season spinach with butter, onion and pepper. Ccover bottom of greased 13 X 9 X 2-inch baking pan with 6 slices of bread; top with 6 slices of cheese. Add half of spinach mixture; sprinkle with 1 c. diced ham. Repeat layers of bread, cheese, spinach and ham. Gently push down mixture with spatula. Cut remaining 6 bread slices diagonally into halves and arrange triangles in 2 overlapping rows on top of strata. Combine eggs and milk; pour over top of entire dish. Cover and refrigerate overnight.
Bake at 325* F. 45 minutes. Remove from oven and sprinkle with shredded Cheddar. Return to oven and bake an additional 15 minutes.
