Heirloom Chocolate Cake
3 cups flour
2 cups sugar
1/4 cup brown sugar
3/4 cup powdered baking chocolate
2 tsp. baking soda
1 tsp. salt
1 cup EXTRA VIRGIN OLIVE OIL
1 cup buttermilk or soured milk
1 package (12 oz.) mini-choclate chips
1 cup boiling water
1 tsp. vanilla
In a large bowl, combine flour, sugar, brown sugar, powdered chocolate, baking soda and salt.
In a separate bowl mix olive oil, buttermilk and eggs. Pour this mixture into the flour mixture and stir well.
Add boiling water and vanilla, stir well. Add the chocolate chips, stir.
Spread in a well oiled 9x13 pan. Bake 40 minutes at 325 degrees. Serve with whipped cream. Makes 12 servings
