I’ve just been diagnosed with a heriditary blood disorder and have been researching ways to block iron absorbtion. One is using whole grain breads to blcok non-heme iron. My favorite bread recipe “Seven Grain cereal bread” from the Sourdough home web page was originally from a Natural Health magazine. It originally was a yeast risen bread, but was converted to sourdough for the website. Since sourdough started destroys the compound in whole grains that blocks iron I was wondering if anyone had a good whole grain bread recipe I could start using.
