Herbed Escargot Butter

Hi Everyone!

There is a restaurant in Hawaii called Michels that serves some of best escargot ever. Problem is, the all the ingredients in the butter mixture aren’t evident and this seems to be a guarded secret (I’ve asked already). Some things like curry, garlic, maybe some shallots and parsley, I can detect and I am close to reproducing it, but just can’t seem to be able to get it right. There may be also a liquor such as Brandy or a type of wine. The butter mixture is a bit on the frothy side when baked and is absolutely fantastic. I am hoping someone would be able to ferret out the ingredients. Any help would be greatly appreciated!
