I’ve just joined this community today, and I’m looking forward to browsing, exchanging, and contributing recipes. Here’s one to start with:

Oriental Chicken Soup

Stew the whole legs and wings (no skin) slowly until very tender. Remove from heat. When cool enough to handle, chop coarsely.
Saute about 1 Tablespoon minced fresh ginger
1/2 small white onion, diced
1 or 2 Tablespoons minced carrot.
1 large bay leaf
1 clove garlic
1 pinch each of thyme, cilantro, and cayenne pepper
1 tsp dark sesame oil
2 dashes of angostura bitters
1 tablespoon soy sauce, or to taste

Strain the broth, then add the ingredients above. Add the juice of a small lemon, 1/2 cup chopped bok choy or other Asian veggies. Just before serving, add 1/2 cup crushed oriental noodles and 1 exotic mushroom, chopped. Serve when the noodles are tender but not mushy.

This soup is monster good - the best that has ever been born in my kitchen.
