Hickory Barbecue Sauce

1/4 cup finely minced onion
1 Tbsp brown sugar
1 Tbsp mustard seed
2 tsp paprika
1 tsp oregano
1 tsp chili powder
1 tsp fresh ground pepper
1/2 tsp salt
1/2 tsp ground cloves
1 bay leaf
1 clove of garlic, pressed
1 cup ketchup
1/2 cup water
1/4 cup olive oil
1/4 cup tarragon vinegar
2 Tbsp Worcestershire sauce
2 or 3 drop of liquid smoke (optional)

Combine all the ingredients in a heavy saucepan and mix well. Simmer for about 25 minutes, stirring occasionally. Remove the bay leaf before serving. Serve with beef or pork. Makes about 2 cups of sauce.
