1 lb. ground beef
1 1/2 tsp. salt, divided
1/2 tsp. pepper, divided
4 medium potatoes, peeled and chunked
4 medium carrots, peeled and chunked
1 large onion, chunked
1/2 cup ketchup
1/2 cup water
1 1/2 tsp. vinegar
1/2 tsp. dried basil
In a bowl, combine beef, 1 tsp. salt and 1/4 tsp. pepper. Shape into 1 inch balls and brown in skillet over medium heat. Drain. Place potatoes, carrots and onion in slow cooker. Top with meatballs. Combine ketchup, water, vinegar, basil and remaining salt and pepper. Pour over top of meatballs. Cook on high for 4-5 hours or until the vegetables are tender. 4 servings.
To make even easier, you could use frozen meatballs that have been thawed.
