Homemade Tortilla Shells
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons salt
3/4 cup shortening
3/4 cup hot water
Combine flour, baking powder and salt; cut in shortening until mixture is crumbly (you may need to add another tablespoon or two of shortening. Eye ball the water - it may not take the full 3/4 cup - you want just enough to make the mixture look moist. Knead lightly, adding a couple more tablespoons of flour until the dough forms a round shape. Cover with a dish towel and let rest for at least an hour.
Pull off pieces of dough and roll with floured rolling pin to the size you want - to about 1/8-inch thick. Heat skillet and “fry” about 1 to 2 minutes per side or until the dough loses that “doughy” look.
Depending on the size you make them will depend on how many you get - can be 6 or can be 12.
