4 skinned and boned chicken breast
1/2 cup mayonnaise
2 Tbsp. spicy brown mustard
1 Tbsp. honey
1 tsp. apple cider vinegar
2 green onions, finely chopped
1/2 tsp. salt
1/4 tsp. pepper
Preheat the grill to 350* to 400*
Place chicken between 2 sheets of heavy-duty plastic wrap, flatten to 1/2" thickness using the flat side of a meat mallet.
Stir together mayonnaise, brown mustard and next three ingredients. Sprinkle chicken with salt and pepper, coat chicken with mayonnaise mixture. Grill, covered with grill lid 4 minutes on each side or until done.
Had this the other night at a get together it is very good and different from the regular honey chicken and so easy to prepare and cook.
Makes 4 servings.
This recipe can be increased to feed a nice crowd at a cook-out.
