1/2 cup walnuts
5 cup water
1 cup sugar
2 cups oil
1 lb large/jumbo shrimp, peeled and deveined
1/2 cup cornstarch
1/2 cup egg whites
2 Tbsp honey
3 Tbsp mayonnaise
1 Tbsp fresh lemon juice
1/2 Tbsp condensed milk
1/2 cup oil

Rinse the walnuts, then boil them in 5 cups water, continually changing
the water until clear. When clear, add the sugar and boil until the sugar
is completely dissolved.

Heat 2 cups oil until it is almost smoking, then deep fry the walnuts
until they’re shiny and brown, and no longer golden. Remove them and
place the walnuts on a cookie sheet to cool.

Mix the cornstarch and egg whites together to form a thick, sticky mixture;
mix the shrimp into this mixture, and set it aside.

Mix the honey, mayonnaise, lemon juice and condensed milk in a medium
bowl until smooth.

Heat the 1/2 cup of oil until smoking/boiling, and deep fry the shrimp
until they are a golden brown color.

Drain the shrimp and then fold them into the honey-mayonnaise mixture.
Mix well and sprinkle with walnuts. Arrange on platter.
