Hot Pâté with Garlic Bread

½ lb finely ground lean beef
½ lb finely ground lean pork
½ lb mild pork sausage
2 cloves of garlic, pressed
2 Tbsp grated onion
¼ tsp basil
¼ tsp marjoram
¼ tsp thyme
¼ tsp oregano
1 tsp salt
½ tsp freshly ground pepper
½ cup beef stock
3 Tbsp sherry
1 Tbsp brandy
Hot Garlic Loaf

Combine beef, pork and sausage and grind through a food chopper 3 times. Add the garlic, onion, basil, marjoram, thyme, oregano, salt and pepper. Mix with a wooden spoon until thoroughly blended. Add the stock, sherry and brandy and blend until smooth. Turn into a buttered 1-quart earthenware mold and cover. Set in a baking pan, then pour in boiling water to half the depth of the mold. Bake in preheated 325 degree oven for 1 hour and 15 minutes. Increase oven temperature to 350 degrees. Remove cover and bake for 30 minutes longer or until brown. Slice and serve with Hot Garlic Loaf. Makes about 3 cups pâté. A red wine would be a pleasant addition to this simple fare!

HOT GARLIC LOAF:

1 loaf unsliced bread
Garlic butter

Slice bread from the top almost to the bottom crust. You may spread softened garlic butter on each slice on both sides. Place on foil and wrap securely, then place on baking sheet. Bake in preheated 300 degree oven for 20 minutes or until heated through. May spread garlic butter on thick slices of French bread and bake until browned. Serve immediately.

BASIC GARLIC BUTTER

½ cup butter, softened
2 small cloves of garlic, pressed
1 tsp fresh, finely chopped parsley
½ tsp salt

Cream butter until light, add remaining ingredients. Mix until well blended. Store in refrigerator in an airtight container until needed.
