Hot Pork Sandwiches

3-1/2 lb. pork shoulder roast, trimmed of fat
1 Tbsp. Cajun seasoning
1 Tbsp. red pepper sauce
1 can (14.5-oz.) diced tomato, undrained
12 Kaiser rolls
12 slices (3/4-oz.) each Monterey Jack cheese w/jalapeño peppers
12 lettuce leaves
12 slices tomato

Place pork in a 4 quart slow cooker. sprinkle with Cajun seasoning and pepper sauce. Pour tomatoes over pork.

Cover and cook on low for 8 to 10 hours.

Remove pork form cooker, place on cutting board. Shred pork using two forks discard bones. Return pork to cooker and mix well. Using slotted spoon remove pork mixture from cooker, fill each roll with 1/2 cup pork mixture. Top with cheese, lettuce and tomato.

Makes 12 sandwiches.
