How do vendors make those thick cracked cookies?


Total beginner at baking (well cooking in general). I have found a Peanut Butter cookie recipe but all the pictures produce those simple 2" cookies with two fork patterns on top.

I notice some cookie vendors (independent) manage to bake cookies that are about 3" diameter but they are also much thicker 0.5" vs. .25" and a very even thickness across the cookie. how do they get these cookies so thick?

Their cookies also show some cracks running around it especially around the edges where the cookies i’ve produced are very smooth. how do they get the cracked texture?
