How To Make A Great Steak - GLAZED

Hi All

I am in search of a good Chargrilled Rump steak recipe topped with a sweet & spicy glaze
We have a franchise here in SA called Spur and in my opinion they have the best steak – It’s topped with their BBQ Grill Basting sauce – it’s a blend of sweet with a spicy backgroud flavor and as you eat on you get the chili kick in it.

Yesterday, I tried this clone recipe of TGIF Friday Sauce Recipe – I’ve never tasted this place so I couldn’t really bench mark it against anything but I thought I’d give it a go.

Ingredients
Onions (Minced) – 2.5 TBSP
Pineapple (Chopped Fine) – 1 TBSP
Garlic (Minced) – 1.5 tsp
Dark Soy Sauce – ¼ tsp
Lemon Juice – 1 tsp
Brown Sugar – 3 TBSP
Cayenne Pepper – 1.5 tsp
Pineapple (Juice) – 150ml
Water – 125ml
Molasses – 1 TBSP
Ginger – 1/8tsp
Clove – 1 stick
Worcester Sauce – 1.5 tsp
Tabasco – 2 tsp
Peach Chutney – 2 tsp

Method

  1. Heat oil then add onion and garlic – cook for a little while till onion is soft
  2. Add Water and Pineapple Juice and bring to a boil
  3. Add Pineapple, Soy Sauce, Lemon Juice, Cayenne Pepper, Ginger, Clove, Woester and Tabasco and bring to a boil
  4. Lastly, add Brown Sugar, Mollasses & Peach Chutney then simmer for approx. 40 minutes till mixture thickens

All I can say is I was heavily disappointed – I dumped the entire sauce down the drain. Here’s the problems I experienced.

  1. I expected the Chopped Pineapple to dissolve in the sauce but it still stayed like fine pieces which could be tasted.
  2. The sauce taste itself was too fruity and then sour on the other end – possibly caused by either the lemon juice, soy sauce or peach chutney
  3. I used some of the sauce on a piece of steak and it glazed over nicely but the taste just didn’t blend well – it was like eating a fruit steak if there is even something like that.

I just found this recipe floating around on the internet and I’m sure this is not what the original tgif sauce taste like cause if it is, then I guess there won’t be so many praises about it.

I have to admit one bad habit on my side – when I look for recipes, I look for the ones with most amount of ingredients and this just complicates things so instead of walking before I can even crawl I think I should step back and go with a simple glaze which someone can recommend and then adjust to my liking.

I only chose TGIF because it receives much praise but I’m open to any suggestions.
