Need a skillet with a lid. Oven-proof plate. Pre-heat your broiler.
One tbsp oil
3-4 eggs
jar of salsa
shredded cheese (monterey jack or cheddar)
3-4 corn tortillas
Place one tbsp oil in skillet. Using tongs, fry tortillas, until limp, and flecked with brown. Place tortillas on oven proof plate, overlapping.
Spoon desired amount of salsa, to edges of tortillas.
Crack eggs in skillet, and add two tbsp water, and cover with lid. When eggs are steam-cooked, gently lift eggs from skillet, and place each egg on a tortilla.
Sprinkle shredded cheese on eggs. Place under broiler for 2-3 mins, until the cheese is melted.
