Individual Nachos Bowls
Serves: 10

1 tbs oil
1 onion, chopped
1 1/3 lbs. ground beef
1 tbs ground cumin
2 tsp Mexican chilli powder
1 x 420g can Mexican Beans
1 x 250g pkt soft fajita tortillas
2 ripe tomatoes, finely diced
½ red onion, finely diced
2 tbs chopped black olives
2 avocados, peeled
juice of 1 lime
2 tbs chopped coriander
1 carton light sour cream

  1. Preheat oven to 350°C. Heat oil in a frying pan and cook onion over low heat for 5 minutes until soft. Increase heat, add mince and spices and cook for 5 minutes, breaking meat up with a wooden spoon as it cooks. Stir in beans and simmer for 10 minutes until thick.

  2. Warm tortillas as per packet instructions then separate and spray each lightly with oil. Press into large muffin tins, overlapping the side to form a bowl. Bake for 10-12 minutes until crisp and golden. Leave to cool.

  3. Drain excess juice from chopped tomato and combine with onion and olives. Mash avocado and stir in lime juice, coriander and salt and pepper. Beat sour cream until smooth. Place each of the accompaniments in separate serving bowls.

  4. To serve, fill tortilla bowls with some of the mince mixture. Reheat in oven for 5 minutes until mince is warm, if necessary (this may take longer if mix was made in advance and refrigerated). Arrange on a platter with the accompaniments so each guest can add their own toppings.
