Indonesian Fried Chicken

(4 servings)

1 (2-1/2 to 3 pound) chicken, cut into serving pieces
1 tsp salt
2 tsp light soy sauce
1 tsp sugar
1 tsp lemon juice
1 Tbsp ground cumin
1/2 Tbsp turmeric

Place chicken in a mixing bowl and add salt, soy sauce, sugar, lemon juice, cumin and turmeric. Massage well so that the pieces are thoroughly coated. Cover with plastic wrap and refrigerate for 2 hours.

Heat oil for deep frying to 370 F. Add chicken pieces one at a time and cook until golden brown. Drain on paper toweling.
