INSIDE-OUT PEANUT COOKIE SANDWICHES
MAKES 20 COOKIES
1 1/4 c. flour
1/2 t. baking soda
1/2 t. salt
3/4 c. (1 1/2 sticks) butter
2/3 c. creamy or chunky peanut butter
1/2 c. sugar
1/2 c. brown sugar
1 t. vanilla extract
1 large egg
1 3/4 c. Nestle Toll House Holiday Shapes & Morsels, divided
Peanut Butter Frosting and Filling
Preheat oven to 350* F. Whisk flour, soda and salt. Beat butter, peanut butter, sugars and extract until creamy. Beat in egg. Gradually beat in flour mixture. Stir in 1 c. morsels. Drop by rounded tablespoonfuls onto ungreased sheets; press down slightly. Bake 10 to 13 minutes or until golden brown. Cool on sheets 2 minutes before removing to cool completely. Spread filling between cookies to make sandwiches; frost tops; sprinkle with remaining morsels.
PEANUT BUTTER FROSTING AND FILLING: 2 cups vanilla frosting and 1/4 c. creamy or chunky peanut butter.
