CHICKEN SALAD
1 (12 1/2 oz.) can chicken OR 2 c. cooked chicken, shredded or cubed
1 c. mayonnaise
1 c. celery, chopped fine
1/4 tsp. dried thyme
1/4 tsp. dried basil
1/4 tsp. dried tarragon
1/2 tsp. mustard powder
Ground cracked pepper to taste
Salt to taste
Combine all ingredients and refrigerate 1 hour to allow herbs to congeal. Makes eight 1/2 cup servings.
Italian Cream Cake
1 stick butter
1/2 C Crisco veg. shortening
1 C buttermilk
1 tsp vanilla
2 C sugar
5 egg yolks
1 C chopped pecans
2 C flour
5 egg whites, stiffly beaten
1 tsp Baking Soda
1 small can flaked coconut
Cream butter and shortening, add sugar and beat until mixture is
smooth. Add egg yolks and beat well. Combine flour and soda and add
to creamed mixture alternately with buttermilk. Stir in vanilla,
add coconut and nuts. Fold in beaten egg whites.
Pour batter into 3 greased and floured 8 " pans. Bake 350º 25
minutes or until done.
Frosting
1- 8 oz pkg softened cream cheese
1/2 stick butter
1 Box powdered sugar
1 tsp vanilla
chopped pecans
Beat cream cheese and butter until smooth. Add sugar and mix well.
Add vanilla and beat until smooth. Spread on cake and sprinkle with
