it's still Lent -

It’s still Lent and tomorrow is Friday - so it will be one of my favorite meatless meal days:

Cook spaghetti; drain; in same pan drizzle some olive oil and minced fresh garlic; return spaghetti to pot, season with kosher salt, cracked pepper and fresh minced parsley; stir to coat well; transfer to pasta platter.

Plum tomatoes - quartered, white onions - sliced, fresh mozzarella - sliced, drizzled with garlic infused olive oil, kosher salt, cracked black pepper, basil.

Crusty Italian bread.

Fresh strawberries, sliced; sprinkled with sugar; allow to “juice”, served over french vanilla ice cream, whipped cream, chopped nuts.

and of course - lunch will be another favorite - salad panini -
French bread - split - drizzle both halves with my bread dip (recipe in RECIPE EXCHANGE - also posted in this forum a few threads down); layered with lettuce, tomato slices, red onions, provolone cheese, pepperoncini and red bell pepper slices - grilled on George Forman and served with iced tea.
